White Wine Braised Chicken
Ingredients
· One chicken - cut up
· One bottle of white wine
· 3 large sprigs of fresh Thyme
· 1 Bay Leaf
· 2 Shallots - diced finely
· 1 clove garlic - chopped
· Olive Oil
Directions
1. Saute shallots in olive oil in pressure cooker on "saute" setting.
2. Add chicken pieces until they are browned
3. Add garlic, bay leaf and white wine.
4. Cook under pressure for 20 minutes.
5. Remove chicken and reduce wine sauce mixture until about 1 cup sauce remains.
6. Serve.
