White Wine Braised Chicken


Braised Chicken Legs with White Wine, Bacon, Cipolline Onions & Mushrooms Recipe



        One chicken - cut up

        One bottle of white wine

        3 large sprigs of fresh Thyme

        1 Bay Leaf

        2 Shallots - diced finely

        1 clove garlic - chopped

        Olive Oil



1.      Saute shallots in olive oil in pressure cooker on "saute" setting.

2.      Add chicken pieces until they are browned

3.      Add garlic, bay leaf and white wine.

4.      Cook under pressure for 20 minutes.

5.      Remove chicken and reduce wine sauce mixture until about 1 cup sauce remains.

6.      Serve.
