Spice Blends

 

BRINE BLEND - CLASSIC

Sea Salt, Lemon Peel, Garlic, Black Pepper, Rosemary, Dalmatian Sage, Bay, Thyme, Savory, Celery Seed

 

This classic brine blend is wonderful for Turkey, Chicken and Pork. Use 2 Gallons of Ice Water mixed with a 1 1/2 cup jar of the brine blend. For extra flavor, you can first dissolve the brine blend in a quart of Apple Cider or a bottle of Riesling, and stir to dissolve for about 5-10 minutes using medium heat. Let cool after it is dissolved and then add 2 gallons of ice water to the Apple Cider or Riesling so the brine liquid is cold. Put in a brine bag or a well cleaned cooler and submerge the turkey, chicken or pork for 6-12 hours as desired. Remove from brine, rinse of excess and pat dry before roasting.

 

 

FRENCH MARKET SEASONING

Shallots, Tarragon, Basil, Green Peppercorns, Chervil, Parsley

 

This delicious, aromatic, flavorful salt free seasoning is excellent with poultry, fish, beef, veal, pork, eggs, potatoes, vegetables, noodles and rice.

 

 

NORTH BEACH ITALIAN BLEND

Basil, Mediterranean Oregano, Marjoram, Parsley, Thyme, Onion, Garlic, De Arbol Chile

 

To create a favorite Italian dish, from a great marinara sauce to meatballs, add this delicious and aromatic, salt free blend. Excellent in your favorite bread crumb recipe. Sprinkle on garlic bread too!

 

 

QUATRE EPICES

 White Pepper, Cloves, Ceylon Cinnamon, Nutmeg, Black Pepper, Ginger

 

The Quatre Epices blend is popular in French cuisine. While its translation is Four Spices, this salt free blend usually contains 5 or 6 spices. It is used for preparing terrines, pates, sausages, rillettes, ragout, game and slow cooked meats. Also great in baked goods. It is salt free.

 

 

GARAM MASALA

Fennel, Coriander, Cumin, Black Pepper, Cardamom, Cinnamon, Cloves

 

This Garam Masala blend is salt free, highly aromatic and pungent. It is delicious in lamb dishes, vegetable dishes and adds great flavor to marinades and salad dressings. It is a vibrant and strong blend, so use sparingly.

 

 

CAJUN BLACKENING BLEND

Sea Salt, Paprika, Onion, Oregano, Cayenne Pepper, Thyme, Black Pepper, Garlic, Allspice

 

This zesty, Cajun blend is great on chicken, beef, pork, seafood, vegetables, rice dishes and gives that wonderful Cajun flavor and aroma to any dish.

 

 

CHESAPEAKE BAY SEASONING

Celery Seed, Paprika, Sea Salt, Mustard, Bay, White Pepper, Cayenne, Black Pepper, Ginger, Allspice, Mace, Coriander, Cardamom, Cloves, Cinnamon, Nutmeg

 

This seasoning is excellent for your next shrimp or crab boil. Great when added to crab cakes and delicious on grilled seafood. Wonderful with chicken and rice dishes too.
