Bill’s “Orange Dinner”

Ingredients for One Person.  Double or Quadruple as necessary.

 

·        2 or 3 cooked Chicken Strips, frozen or already prepared from grocery store hot deli section.  Slice into one-inch pieces.

·        1 tsp olive oil

·        ½ cup asparagus or broccoli pieces

·        ½ green pepper cut into large strips

·        2 cloves garlic, minced.

·        1 carrot cut in long strips with potato peeler

·        1 cup sliced cabbage

·        ½ cup vinegar, any kind

·        ¼  cup granulated Splenda or sugar if you are a purist

·        1 Tbs ketchup

·        1 Tbs soy sauce

·        ½ cup orange or cranberry juice

·        ¼ white onion, cut into large but bit-size chunks

·        ¼ red onion, cut into large but bit-size chunks

·        1 green onion, cut into 1” diagonal pieces

·        2 Tbs corn starch dissolved into ½ cup water

·        Salt and pepper

·        Two shakes of Accent

·        ¼ tsp cayenne pepper, if desired

·        Sesame seeds

 

In a large skillet, heat olive oil and sauté vegetables that require extra cooking--green peppers, asparagus, broccoli.  Cook 2 minutes on medium high.  Add garlic, carrots and cabbage.

 

Add vinegar, Splenda, ketchup, soy sauce, orange or cranberry juice, salt and peppers, Accent, and cut up chicken strips.  Stir to mix thoroughly.

 

Once boiling, add corn starch to thicken as needed.  Or if too thick, add more water.

 

Taste sauce.  Add more Splenda if not sweet enough.  Add more vinegar or water if too sweet.

 

Toss in onions.  Cook another 30 seconds and serve with sesame seeds sprinkled on top.
